Our journey started about 10 years ago, when the first gluten free bakery products appeared on the shelves everywhere. They were long shelf life products, very innovative for the time but let's be Just about it... they had a long way to go to look and taste like a real bread!
At Just: Gluten Free Bakery we believe that gluten free bakery products can be as good as standard wheat products, or better! Our Team are hard-working, very individual people all passionate about gluten free baking and joined by the same goal: to do it Justice!
Our approach is fresh but the methods we use are traditional to give you good, tasty products with a homemade feel. We hope our creative approach to gluten free baking will pleasantly surprise you!
Delivery or Click & Collect
We deliver our products UK wide (minimum order £12.00) or you can order your bread online and arrange to 'Click & Collect' from our bakery at the Motherwell Food Park.
Bakers on a Mission
Does some food not agree with you? It's difficult to avoid certain foods, especially when it's food that you love. And who doesn't love bread? Crispy toast in the morning, a panini or a roll with your favourite soup for lunch and garlic bread with your dinner, yum! Nothing can stop you from having all of the above anymore!
At Just: Gluten Free Bakery we are obsessed with bread—gluten free bread! Our mission is to create bakery products suitable for you—the people who need to avoid certain ingredients, and make them so tasty that your loved ones will want to have a bite too, and then another one and another one...
This is only the beginning. At Just: Gluten Free Bakery we like a good challenge and we will always strive for improvement. Our goals are:

To use kitchen cupboard ingredients—it's not always easy so when we have to use ingredients hard to pronounce, we will be Just and tell you why
To never ever use genetically modified (GM) ingredients

To keep on reducing fat, salt and sugar content in our products but not to compromise on taste and quality
We hope you enjoy our new range of bakery products. Really, they are gluten free! Not only that, they are also wheat, dairy and egg free! And suitable for Vegetarians and Vegans.
How to store and use our products
Our products do not contain any artificial preservatives, so please store them in a cool, dry place away from direct sunlight to enjoy them for longer.
To make a golden, crunchy toast allow a bit more time in the toaster (approx. 4 minutes depending on the toaster).
Our breads and rolls freeze really well, make sure you freeze them on the day of purchase.

Water, Tapioca starch, Rice flour, Rapeseed oil, Potatoes, Psyllium husk, Humectant: Glycerine, Stabiliser: Hydroxypropyl Methylcellulose, Maize flour, Sugar, Yeast, Salt, Preservative: Sourdough (extracted, dried rice).

Water, Tapioca starch, Rice flour, Rapeseed oil, Potatoes, Psyllium husk, Pumpkin seeds (2.4%), Humectant: Glycerine, Brown linseed (2.4%), Stabiliser: Hydroxypropyl Methylcellulose, Maize flour, Sugar, Yeast, Salt, Quinoa seeds (0.7%), Poppy seeds (0.6%), Preservative: Sourdough (extracted, dried rice).

Tricky Ingredients Guide
Hydroxypropyl Methylcellulose—sounds quite scary but it's not. Hypromellose is modified cellulose (not genetically modified!). Cellulose comes from plants and is commonly used as a dietary fibre. It is recognised as safe by the FDA and widely used in food industry. At Just: Gluten Free Bakery we use it to give our products the texture of real bread and to help them freeze.
White bread, brown bread, seeded bread, is that all?
Not anymore, and definitely not for Just: Gluten Free Bakery! We listened to people who follow us on facebook and twitter and are now working on a range of tasty muffins and pizza bases. They will be gorgeous, mouth-watering and good for you!

Gluten Free Facts
What is Gluten?
Gluten is a name for proteins found in wheat, barley and rye. Arguably, oats also contain gluten so unless stated ‘gluten free’ on the label, you should avoid foods with oats in them if you are on a gluten free diet.
What products contain Gluten?
Bakery products, pasta, breakfast cereals, breadcrumbs, beers and lagers, cakes, pizza and other products made with flour are sources of gluten. But read all labels carefully because some processed foods like soups, sauces, sausages, burgers or ready meals may also contain gluten.
Some personal care products contain gluten! Don't worry though, unless you ingest them, they will not cause you any harm. Avoid them if you have small children that are intolerant or allergic to gluten.
What does it mean if a product is labelled ‘Gluten free’?
Only foods containing 20ppm (20mg/kg) of gluten or less can be labelled ‘gluten free’. Even naturally gluten free products may contain small amount of gluten. 20ppm is an amount of gluten which has been proved by research not to be toxic to people with Coeliac disease. At Just: Gluten Free Bakery we test our products to <10ppm of gluten.
A Gluten free diet, if well balanced, will give you energy, relieve fatigue, improve your mood and help with digestion problems. When on a gluten free diet, remember to eat a lot of naturally gluten free products like fruit, veg, fish, plain meat, rice or nuts.
